The food story at Outpost 12, remains forest first in keeping with its bio-lodge credentials. The dining experience here stretches from the beautifully wild to the pastoral, and from the proudly indigenous to comfort delights. While the all day dining and the bar with their river facing location and patio are ideal for long idling afternoons, there is much to tempt you with dollops of adventure. Get riverside, climb up a star bed, curl up around a bush kitchen, there is much to make you believe in the hospitality of a formidable forest.
The menus have been engineered from what is seasonally available, foraged, bred on Kanha’s adjunct farms or grow wildly in their natural habitat. Be it millets or forest foraged honey or be it the country chicken and wild mushrooms.
All Day Dining
All day dining should be what it feels like at the Outpost 12. In the company of everything delightfully wild and lush around you. The menu at Maikal which takes its name after the range of mountains in the Satpuras that nestle the Kanha reserve forest, remains true to its land. From the indigenous and inventively local surprises on the table to the comfort classics that keep the peace, this is where the leisure hours go long. The river facing and poolside patio is an ideal haunt for conversational meals. Local millets, country chicken, foraged ingredients, local farm produce and forest fresh greens are sure to keep the appetite in high gear.

THE WATERING HOLE
Brander's 12 is a double-antlered tribute. One to the graceful majesty of the Barasingha, the Hard Ground Swamp Deer which Kanha Reserve forest prides itself on and A.A. Dunbar Brander, an exceptional forester and conservationist in his jungle time who served Central India. The mood inside reflects that of a raconteur's lair, thick with stories. A signature series of 12 forest based cocktails, local spirits and a range of fine liquors give some rather clever finger foods company. Here the evenings and stories stay long.

Starbed
Why stay content with the terrestrial when you can ditch the four walls and climb up to see a constellation while having a fine course meal. This is a rather neat surprise in the jungle where your eyes wander off into the foggy wilderness of Kanha while you sup on a delectable multi-course meal that takes you on a journey from the wild to the farm fresh. With many conversations and forest calls in between. And yes, this is available only on prior booking and advance notice. After all the views are to swoon over. Keep a watch. They call it the Captain's lookout.

For the ones seeking adventure though, Outpost 12 brings it on with the headlights. Get going on a bush dining safari where you get treated to a life in the outdoors and experience how memorable a forest-first hospitality can be, with cuisine that is both adventurous and fresh. Or participate in a pit roast in the woods to get a flavour of the country life. And if you like it mellower, then choose from a selection of curated spots around the bio-lodge and within which are both romantic and blissfully private. Group dining (always on request) is always fun and sparkling with conversations as our associates and keepers of the jungle rustle up a memorable meal experience.

The riverside is where you would want to be if not chasing stripes at the Safari. From a fram fresh breakfast to a forager's gourmet meal, this is as as special as the Banjar.
